Cheese Soup

Cheese Soup (6 Servings)

Ingredients
Grated cheese ½ cup
Veg. Stock Or 2 cups cubes with 2 cups water 2 cups
Carrot minced ¼ cupOnions minced ¼ cup
Butter 3 dspWater 1 cupMilk 1 cup
Celery minced ½ cupFlour ¼ cup

Method
Boil the stock with the carrot and celery in it. Remove before it is overcooked. Sauté the onion in t he butter before it turns colour add the flour stirring well. Remove from fire and dilute it with one cup of water and mix until smooth and without any lumps. Pour in the milk, put back on the fire and cook until it becomes rather thick. Mix the soup and the sauce together and heat it well without boiling. Add the cheese and mix well.
